Coffee Cake Crumble Cookies

Cookie Dough
- 1 1/4 cup All purpose Flour
- 3/4 cup cake flour
- 1 teaspoon cornstarch
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 8 tablespoons Butter cold, cut into small cubes
- 1/4 cup brown sugar packed
- 1/2 cup white sugar
- 1 teaspoon vanilla extract
- 2 eggs large
Crumble
- 1/2 cup all purpose flour
- 1/3 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon salt
- 5 tablespoons butter melted
Icing
- 3 tablespoons milk or heavy cream
- 1 Cup powdered sugar
- 1 teaspoon vanilla
Preheat the oven to 400 degrees and line baking sheets with parchment paper.
Combine dry ingredients in a large bowl and set aside.
Place the cubed butter and white and brown sugar into a large bowl or stand mixer and combine until creamed together and light in color, 3-4 minutes.
Add the eggs and vanilla and mix until combined. Gradually add in the dry ingredients until incorporated.
Using a large cookie scoop make 8-10 large cookie dough balls.
Make the crumble filling by combing all ingredients together. Using your fingers to make small clumps.
Using the back of a spoon make small indentations into the top of the dough calls. Add 1-2 tablespoons of the crumble filling in each cookie. Bake for 10-12 minutes until edges are slightly golden.
Allow to cool for 5 minutes before transferring to a wire rack to cool completed.
Make icing by whisking all ingredients together. Top each cookie with a generous drizzle.
