Coffee Cake Crumble Cookies

Ingredients

Cookie Dough

  • 1 1/4 cup All purpose Flour
  • 3/4 cup cake flour
  • 1 teaspoon cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons Butter cold, cut into small cubes
  • 1/4 cup brown sugar packed
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs large

Crumble

  • 1/2 cup all purpose flour
  • 1/3 cup brown sugar
  • 1 tablespoon cinnamon
  • 1/2 teaspoon salt
  • 5 tablespoons butter melted

Icing

  • 3 tablespoons milk or heavy cream
  • 1 Cup powdered sugar
  • 1 teaspoon vanilla

Instructions

  • Preheat the oven to 400 degrees and line baking sheets with parchment paper.
  • Combine dry ingredients in a large bowl and set aside.
  • Place the cubed butter and white and brown sugar into a large bowl or stand mixer and combine until creamed together and light in color, 3-4 minutes.
  • Add the eggs and vanilla and mix until combined. Gradually add in the dry ingredients until incorporated.
  • Using a large cookie scoop make 8-10 large cookie dough balls.
  • Make the crumble filling by combing all ingredients together. Using your fingers to make small clumps.
  • Using the back of a spoon make small indentations into the top of the dough calls. Add 1-2 tablespoons of the crumble filling in each cookie. Bake for 10-12 minutes until edges are slightly golden.
  • Allow to cool for 5 minutes before transferring to a wire rack to cool completed.
  • Make icing by whisking all ingredients together. Top each cookie with a generous drizzle.
