Coffee Cake Crumble Cookies
Coffee Cake Crumble Cookies – let’s talk about them. Easily one of the best things I’ve made all month, and I don’t say that lightly. Imagine everything you love about a classic coffee cake – the soft, buttery crumb, that sweet and spicy crumble topping – but in a bite-sized, handheld cookie form. Sounds like a dream, right? Well, here they are. The dough itself is soft and fluffy, giving off major cake vibes, and the crumble is everything you want it to be – sweet, spicy, and just enough crunch to keep you coming back for more.
Honestly, the crumble might be my favorite part. I’m all about the texture in my cookies, and this one delivers. It’s got that perfect blend of cinnamon and sugar that hits your taste buds in all the right ways, with a little kick of spice to keep things interesting. And once you drizzle that icing on top? Forget it. It’s like you took the best slice of coffee cake and somehow turned it into a cookie – a genius move, if I do say so myself.
What really gets me about these cookies is how perfectly they fit into the fall flavor lineup. In my expert opinion, fall flavors can be broken down into three main categories: apples, pumpkin, and cinnamon. Last week, I shared my Apple Cider Cookies, which fully satisfy the apple lovers out there. But these Coffee Cake Crumble Cookies? They’re all about the cinnamon. If you’re craving that warm, cozy, sweet-spicy flavor that only cinnamon can deliver, this is the cookie for you. It’s like fall wrapped up in one perfect bite.
So, if you’re into the idea of having coffee cake in cookie form (and let’s be real, who isn’t?), you need to make these. I’ve already gone through two batches this month, and I’m not planning on slowing down anytime soon.
