Peach & Toasted Coconut Smoothie
Ingredients
- 2 cup frozen peaches
- 1 medium frozen banana
- 1 scoop collagen powder optional
- 1/2 cup coconut yogurt I like the cocoyo brand
- 1/4 cup coconut cream
- 1/2 cup coconut milk
Toppings
- 1/4 cup coconut flakes unsweetened
Instructions
- 1. Spread coconut flakes on a parchment lined baking sheet2. Toast in the oven with the broiler, turning every 1-2 minutes until toasted and fragrent. Do NOT walk away. Your coconut flakes will quickly go from perfectly golden to charred flakes, trust me. 3. While coconut flakes are cooling, blend smoothing ingredients together – frozen peaches, banana, coconut yogurt, coconut cream, collagen powder. Slowly add coconut milk to reach desired consistency.4. Separate smoothie into two glasses and top with toasted coconut flakes and peach slices. Enjoy!
