Broccoli Salad with Champagne Vinaigrette
Ingredients
Champagne Vinaigrette
- 1/4 cup extra virgin olive oil
- 2 tablespoons champagne vinegar
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 2 teaspoon Dijon mustard
- 1 teaspoon salt kosher
Broccoli Salad
- 1 head broccoli florets finely chopped flor
- 1 jalopeno diced, with or without seeds
- 1 bunch Cilantro Finely chopped
- 1 small shallot thinly sliced
- 1/2 cup dates pitted and chopped
- 4 oz goat cheese crumbled
- 2 chicken breast shredded
- 1/4 cup almonds toasted and chopped
Instructions
Champagne vinaigrette
- Add all ingredients to a small bowl or jar. Mix throughly.
Broccoli Salad
- Combine all ingredients into a large bowl. Pour dressing over and mix throughly. Serve immediately or store in fridge until ready to eat.
