These Mediterranean Chicken Sausage Breakfast Biscuits are an easy, protein-packed meal prep staple made with eggs, chicken sausage, and Mediterranean flavors like roasted red peppers and olives. They're freezer-friendly and delicious reheated, perfect for a quick, satisfying breakfast on busy mornings.

Ingredients

  • 1 tablespoon Olive Oil
  • 1 yellow onion diced
  • 8 oz chicken sausage
  • 8 eggs
  • 1/2 cup roasted red bell peppers diced
  • 1/4 cup Kalamata olives diced
  • 2 cups spinach chopped
  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1 tablespoon baking powder
  • salt
  • pepper

Instructions

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper
  • Brown chicken sausage in a skillet, add onions until softened. Season with salt and pepper
  • In a large bowl whisk eggs, then add remaining ingredients. Fold chicken sausage and onion mixture in.
  • Using a large cookie scoop to make biscuits. Place on baking sheet and bake for 20 minutes until slightly browned
