Ingredients

  • 1 cup pineapple chunks
  • 1 bunch mint
  • 2 lime
  • 4 oz pineapple juice
  • sparkling water

Instructions

  • On your grill or strove top grill pineapple over medium heat until charred and juicy, about 5 minutes. Set aside to cool to room temp.
  • Place 2-4 grilled pineapple pieces in the bottom of a tall glass. Add mint and juice of 1/2 lime. Muddle to break down pineapple (I used the back of a wood spoon, but use what you’ve got).
